It’s just a Tassie thing to call them Crays - but rest assured they are Rock Lobsters.

Scientific Name: Jasus edwardsii​

Crayfish, crayfish, crayfish… Everyone loves Crays. It's undeniable. They are the staple of Tasmanian Christmas lunch and dinner, and a feature of barbeques all summer long. We only stock locally caught, East and West Coast Tasmanian Crays.

Also known as Crayfish, Lobster, Southern Rock Lobster & Eastern Rock Lobster, they are caught on all coasts of Tasmania, in a depth of approximately 160m. The flesh is very firm when cooked, white, succulent and sweet. They’re good for grilling, baking, steaming/poaching, stir-fry & boiling.
Cray season is closed for six weeks each year, beginning at the end of September.
